1 medium head cauliflower, cut into uniform florets

1 cup all-purpose flour

1 cup water (or milk for richer coating)

1 tsp garlic powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

1 cup breadcrumbs or panko (optional; for extra crunch — panko recommended)

1–2 tbsp olive oil (or neutral oil) OR cooking oil spray for finishing

Fresh parsley, chopped (optional, for garnish)

Dipping Sauce

½ cup mayonnaise

1 tbsp ketchup

1 tsp smoked paprika

1 tsp lemon juice

Salt & pepper to taste

Equipment
Air fryer (basket-style or oven-style)

Two bowls (one for batter, one for panko)

Tongs or fork for coating

Oil spray (best) or small brush + oil

Step-by-step — Air Fryer Method
1. Preheat the air fryer
Preheat to 375°F (190°C) for 3–5 minutes (most air fryers benefit from a short preheat).

2. Make the batter
In a medium bowl whisk together:

Flour + water (or milk) until smooth

Add garlic powder, paprika, salt, and pepper — whisk to combine

If using panko, place it in a separate shallow bowl.

3. Coat the florets
Pat cauliflower florets dry so the batter adheres.

Dip each floret into the batter, letting excess drip off.

(Optional) Roll battered florets in panko, pressing lightly so crumbs stick. Place coated pieces on a tray while you finish the batch.

4. Lightly oil the florets
Toss the coated florets gently with 1–2 tablespoons oil in a bowl or arrange them on a tray and spray each side lightly with cooking spray. This helps them brown in the air fryer.

5. Air fry (do not overcrowd)
Arrange the florets in a single layer in the air fryer basket with small gaps for airflow. Work in batches if needed.

Air Fry: 12–15 minutes at 375°F (190°C)

Flip halfway: At about 6–8 minutes, open and flip/spray the tops lightly with oil, then continue cooking.

Done when: Golden brown and crisp on the outside, tender when pierced with a fork. If you prefer extra crunch, raise temp to 400°F (200°C) for the last 1–2 minutes while watching closely.

6. Make the dipping sauce
While the last batch cooks, whisk together mayo, ketchup, smoked paprika, lemon juice, salt and pepper. Taste and adjust.

7. Serve
Transfer finished bites to a serving plate, garnish with parsley (optional), and serve immediately with the dipping sauce.

Tips for Perfect Air-Fried Cauliflower
Uniform pieces: Cut florets similar in size for even cooking.

Don’t overcrowd: Air needs circulation — cook in batches for best crispness.

Panko = crunch: If you skip panko, the bites will be good but slightly less textured.

Light oil is enough: Too much oil will make them soggy; spray or 1–2 tbsp total oil works best.

Air fryer variability: Every model runs a bit hot/slow — start checking 2 minutes early the first time you try this recipe.

Variations
Spicy: Add ¼–½ tsp cayenne or chili powder to the batter.
