Crockpot Beef Tips and Noodles
Tender slow-cooked beef tips in a rich gravy served over buttery egg noodles — simple, comforting, and perfect for a busy day.
Ingredients
For the Beef Tips

2–2.5 lbs beef stew meat or sirloin tips

1 medium onion, diced

3 cloves garlic, minced
-
2 cups beef broth
-
1 cup water
-
1 packet brown gravy mix
-
1 packet onion soup mix (or 1 tablespoon homemade mix)

1 tablespoon Worcestershire sauce
-
1 teaspoon dried thyme (optional)
-
1 teaspoon paprika
-
Salt & black pepper, to taste

2 tablespoons cornstarch + 3 tablespoons cold water (for slurry)
For Serving

12 oz egg noodles
-
2 tablespoons butter
-
Parsley for garnish (optional)
Instructions
1. Prepare the Meat

Season beef tips with salt, pepper, and paprika.

(Optional but recommended) Sear the beef in a hot skillet with a little oil for 3–4 minutes until browned.

This step adds flavor but can be skipped for convenience.

2. Load the Crockpot
Add to the slow cooker in this order:

Diced onions
-
Garlic
-
Beef tips
-
Onion soup mix
-
Brown gravy mix
-
Beef broth, water, Worcestershire sauce, and thyme
Stir lightly to combine.
3. Cook

Cook on LOW for 7–8 hours
OR -
Cook on HIGH for 4–5 hours
The beef should be fork-tender.
4. Thicken the Gravy

Mix cornstarch and cold water to form a slurry.

Pour into the crockpot, stir.

Cover and cook another 15–20 minutes until thickened.
5. Prepare the Noodles
-
Cook egg noodles according to package directions.

Drain and toss with butter.
6. Serve
Spoon tender beef tips and rich gravy over the warm buttered noodles.
Garnish with parsley if desired.
