🧀 Keto Pizza Muffins

(Makes 12 muffins)

Ingredients

  • 6 large eggs

  • 1 cup almond flour

  • ½ cup shredded mozzarella cheese

  • ¼ cup parmesan cheese

  • ¼ cup chopped pepperoni or cooked sausage

  • ¼ cup chopped bell peppers or spinach (optional)

  • 2 tbsp tomato paste or low-carb marinara

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp baking powder

  • Salt & pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with silicone liners or grease lightly.

  2. In a large bowl, whisk eggs until smooth.

  3. Add almond flour, baking powder, cheeses, tomato paste, and seasonings. Mix until well combined.

  4. Fold in pepperoni and optional veggies.

  5. Spoon mixture evenly into muffin cups, filling about ¾ full.

  6. Bake for 20–25 minutes or until muffins are golden and a toothpick comes out clean.

  7. Cool 5 minutes before removing. Serve warm or store in fridge/freezer.
