For caramel (optional, keto-friendly):

  • 2 tablespoons erythritol

  • 1 tablespoon water


Instructions:

  1. Preheat oven: Preheat oven to 325°F (160°C).

  2. Prepare caramel (optional): In a small saucepan over low heat, dissolve erythritol in water until it forms a syrup. Pour into the bottom of individual ramekins or a 6–8 cup flan mold.

  3. Make flan mixture: In a blender or mixing bowl, combine cream cheese, heavy cream, eggs, vanilla extract, erythritol, and salt. Blend or whisk until smooth and fully incorporated.

  4. Pour and bake: Pour the mixture over the caramel in the ramekins or mold. Place the ramekins in a larger baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins (water bath).

  5. Bake: Bake for 35–45 minutes or until the flan is set but still slightly jiggly in the center.

  6. Cool: Remove from water bath and let cool to room temperature. Refrigerate for at least 2 hours before serving.

  7. Serve: Run a knife around the edges, invert onto a plate, and drizzle any caramel from the bottom over the flan.
