Mongolian Ground Beef Noodles

Serves 4 | Prep: 10 min | Cook: 20 min | Total: 30 min

Ingredients:

1 lb lean ground beef (90% lean)

5 cloves garlic, minced

1/3 cup brown sugar substitute (e.g., monk fruit)

1/4 cup low-sodium beef broth

1/3 cup reduced-sodium soy sauce

3 tbsp lower-sugar hoisin sauce

1/2 tsp each ground ginger & black pepper

Pinch of red pepper flakes (optional)

10 oz whole wheat linguine

1 tbsp cornstarch + 2 tbsp water

4 green onions, sliced

Instructions:

Cook pasta in boiling water until al dente. Drain and set aside.

Brown beef in a skillet over medium-high heat, breaking it apart. Drain excess fat.

Add garlic, soy sauce, broth, sweetener, hoisin, ginger, pepper, and red pepper flakes. Stir well.

Thicken sauce by mixing cornstarch + water, then stirring into the skillet. Simmer until thickened.

Toss in pasta, coating evenly. Heat for 2–3 minutes.

Garnish with green onions and serve hot.
