Ingredients
800 g (1.75 lb) baby potatoes or Yukon gold potatoes, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons nutritional yeast (for vegan “Parmesan”)
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon smoked paprika
Salt and black pepper, to taste
Optional garnish: fresh parsley, chopped
Instructions
Preheat the oven
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Prepare the potatoes
