1 medium onion, diced

3 cloves garlic, minced

1 tbsp fresh ginger, grated (or 1 tsp ground)

2 tbsp curry powder (or garam masala)

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili flakes (optional)

2 medium sweet potatoes, peeled & cubed

1 can (400 g / 14 oz) chickpeas, drained & rinsed

1 can (400 ml / 14 oz) coconut milk

1 can (400 g / 14 oz) diced tomatoes

½–1 cup vegetable broth (as needed)

Salt & black pepper, to taste

Fresh lime or lemon juice

Fresh cilantro, for garnish
Instructions

Sauté aromatics
Heat oil in a large pan over medium heat. Add onion and cook 4–5 minutes until soft. Stir in garlic and ginger; cook 1 minute. -
Bloom spices
Add curry powder, cumin, paprika, and chili flakes. Stir for 30 seconds until fragrant. -
Simmer
Add sweet potatoes, chickpeas, coconut milk, tomatoes, and broth. Stir well. -
Cook
Bring to a gentle boil, then reduce to a simmer. Cover and cook 18–25 minutes, until sweet potatoes are tender. -
Finish
Season with salt, pepper, and a squeeze of lime or lemon juice. Adjust thickness with more broth if needed. -
