  • ½ cup fresh parsley or cilantro, finely chopped

  • ½ cup raw cashews (whole or roughly chopped)

  • Optional add-ins: shredded carrots, zucchini, red onion, cherry tomatoes

Dressing

  • 3 tbsp fresh lemon juice or lime juice

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp maple syrup or agave

  • 1 tsp Dijon mustard (optional but recommended)

  • 1 small garlic clove, finely grated or minced

  • Salt and black pepper, to taste


Instructions

  1. Prep the vegetables
