Avocado Garlicky Mushroom Toast

Ingredients
Garlicky Mushrooms

8 oz (225 g) mushrooms, sliced (cremini, button, or shiitake)

1 tbsp olive oil or vegan butter

2–3 cloves garlic, minced

½ tsp soy sauce or tamari

¼ tsp black pepper
-
Pinch of chili flakes (optional)

Fresh thyme or parsley, chopped (optional)
Avocado Smash

1 large ripe avocado
-
1–2 tsp lemon juice
-
Salt, to taste

Black pepper, to taste
To Serve

2 thick slices sourdough or rustic bread, toasted

Optional toppings: microgreens, sesame seeds, nutritional yeast, balsamic glaze
Instructions

Cook the mushrooms
Heat oil or vegan butter in a skillet over medium heat.
Add mushrooms in a single layer and cook undisturbed for 3–4 minutes until browned.
Stir, then add garlic, soy sauce, pepper, and chili flakes.
Cook another 1–2 minutes until fragrant and glossy.
Remove from heat and stir in herbs if using. -
Mash the avocado
In a small bowl, mash avocado with lemon juice, salt, and pepper until creamy but slightly chunky. -
Toast the bread
Toast bread until golden and crisp. -
Assemble
Spread avocado generously over toast.
Top with warm garlicky mushrooms.
Finish with optional toppings as desired.
