Ingredients

Mushrooms

  • 16 ounces whole mushrooms (button or cremini)

  • 2 tablespoons olive oil or melted butter

Coating

  • ¾ cup almond flour

  • ½ cup finely grated Parmesan cheese

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Binding

  • 2 large eggs

Optional Garnish

  • Fresh parsley, finely chopped


Instructions

1. Prepare the Oven

  • Preheat oven to 400°F (205°C).

  • Line a baking sheet with parchment paper or lightly grease it.


2. Prepare the Mushrooms

  • Clean mushrooms with a damp paper towel.

  • Trim stems if needed.

  • If mushrooms are large, cut them in half for even cooking.

  • Pat mushrooms dry thoroughly to prevent sogginess.


3. Set Up Breading Station

  • Bowl 1: Beat the eggs.

  • Bowl 2: Mix almond flour, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.


4. Coat the Mushrooms

  • Dip each mushroom into egg, allowing excess to drip off.

  • Roll in almond flour mixture, pressing gently to adhere.

  • Place coated mushrooms on the baking sheet.


5. Bake

  • Lightly drizzle or spray mushrooms with olive oil or melted butter.

  • Bake for 18–22 minutes, flipping halfway through.

  • Bake until golden brown and crisp.


6. Serve

  • Remove from oven and let rest for 2–3 minutes.

  • Garnish with fresh parsley if desired.

  • Serve warm.

  • Dry mushrooms thoroughly to help the coating crisp.

  • Use finely grated Parmesan for better binding.
