Keto Garlic Breadsticks

Ingredients

Dough (Fathead Style)

  • 1 1/2 cups low-moisture shredded mozzarella

  • 2 tablespoons cream cheese, softened

  • 3/4 cup fine blanched almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1 large egg, room temperature

Garlic Butter Topping

  • 2 tablespoons unsalted butter, melted

  • 2 cloves fresh garlic, very finely minced

    • or 1 teaspoon garlic powder

  • 1 tablespoon grated Parmesan cheese

  • 1 tablespoon fresh parsley, finely chopped (optional)


Equipment Needed

  • Microwave-safe bowl

  • Mixing spatula

  • Parchment paper

  • Baking sheet

  • Sharp knife or pizza cutter


Step-by-Step Instructions

Step 1: Preheat and Prepare

  • Preheat oven to 400°F (205°C).

  • Line a baking sheet with parchment paper.

  • Lightly grease parchment to prevent sticking.


Step 2: Melt the Cheese (Critical Step)

  1. Add mozzarella and cream cheese to a microwave-safe bowl.

  2. Microwave for 30 seconds, stir.

  3. Repeat in 15–20 second bursts, stirring between each, until fully melted and smooth.

Important:
Do not overheat. Overheating causes oil separation and tough dough.


Step 3: Form the Dough

  1. Add almond flour, baking powder, garlic powder, and salt directly into the melted cheese.

  2. Stir quickly until partially combined.

  3. Add the egg and mix until a cohesive dough forms.

Dough Texture:

  • Warm, elastic, slightly sticky

  • If too sticky: lightly oil hands

  • If too dry: microwave dough for 10 seconds


Step 4: Shape the Breadsticks

  1. Transfer dough onto parchment paper.

  2. Flatten into a rectangle about 1/2 inch thick.

  3. Use a knife or pizza cutter to cut into 8 equal breadsticks.

  4. Slightly separate the sticks for even baking.


Step 5: First Bake

  • Bake for 12–14 minutes until lightly golden on top.

  • Edges should look set but not dark.


Step 6: Prepare Garlic Butter

While baking, mix:

  • Melted butter

  • Minced garlic

  • Parmesan

  • Parsley

Let sit 2–3 minutes to infuse flavor.


Step 7: Garlic Butter Finish

  1. Remove breadsticks from oven.

  2. Brush garlic butter generously over each stick.

  3. Return to oven for 3–5 minutes until golden and fragrant.
