Ingredients

“Tortillas”

  • 2 large low-carb tortillas or
    1½ cups shredded mozzarella (for cheese-only shells)

Filling

  • ½ lb ground beef (80/20 works best)

  • Salt & pepper, to taste

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika (optional)

  • ½ cup shredded cheddar cheese

  • ¼ cup diced pickles

  • 2 tbsp diced onion (optional, very small amount for keto)

  • 1 tbsp mustard

  • 1 tbsp sugar-free ketchup

Optional toppings

  • Bacon bits

  • Lettuce (add after cooking for crunch)

  • Sesame seeds (for that burger vibe)


🔥 Instructions

  1. Cook the Beef

    • Brown ground beef in a skillet over medium heat.

    • Season with salt, pepper, garlic powder, onion powder, and paprika.

    • Drain excess grease if needed.

  2. Mix Cheeseburger Flavor

    • Stir mustard, sugar-free ketchup, pickles, and onions into the beef.

    • Remove from heat.

  3. Assemble Quesadillas

    • Heat a clean skillet over medium-low.

    • Place tortilla (or a cheese shell) in the pan.

    • Sprinkle cheddar cheese, add beef mixture, then more cheese.

    • Top with second tortilla (or fold if using cheese-only shell).

  4. Cook Until Crispy

    • Cook 2–3 minutes per side until golden and melty.

    • Press gently with a spatula for crisp edges.

  5. Serve

    • Slice and garnish with sesame seeds or bacon bits.

    • Serve with sugar-free burger sauce or mayo.

  • Sprinkle ¾ cup shredded mozzarella or cheddar directly into a nonstick pan.

  • Cook until bubbly and lightly browned.

  • Add filling, fold, and crisp both sides.
