Chicken Black Beans Skillet

Ingredients

  • 1 lb chicken breast or thighs, diced

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp paprika

  • ½ tsp garlic powder

  • Salt & pepper, to taste

  • 1 (15 oz) can black beans, drained & rinsed

  • ½ cup corn (optional)

  • ½ cup salsa or diced tomatoes

  • 2 tbsp lime juice

  • Fresh cilantro (optional)


Instructions

  1. Season chicken with chili powder, cumin, paprika, garlic powder, salt, and pepper.

  2. Heat oil in a large skillet over medium-high heat.

  3. Cook chicken 5–7 minutes until browned and cooked through.

  4. Add black beans, corn, and salsa.

  5. Simmer 3–5 minutes until heated through.

  6. Stir in lime juice and garnish with cilantro.


Serving Ideas

  • Over rice or quinoa

  • In tacos, burritos, or quesadillas

  • On salads or nachos

  • Creamy: Stir in ¼ cup sour cream or cream cheese.
