🧾 Ingredients

Pound Cake

  • 1Β½ cups unsalted butter, softened

  • 2Β½ cups sugar

  • 6 large eggs, room temperature

  • 3 cups all-purpose flour

  • Β½ tsp baking powder

  • Β½ tsp salt

  • 1 cup milk

  • 1 tbsp vanilla extract

  • 2 cups peaches, peeled & chopped (fresh or canned, well drained)

Cobbler Topping

  • Β½ cup brown sugar

  • 1 tsp cinnamon

  • ΒΌ tsp nutmeg

  • 2 tbsp melted butter

Optional Glaze

  • 1 cup powdered sugar

  • 2–3 tbsp milk or peach juice

  • Β½ tsp vanilla

  1. Preheat oven to 170Β°C / 325Β°F. Grease and flour a bundt or loaf pan.

  2. Cream butter & sugar until light and fluffy.

  3. Add eggs one at a time, beating well after each.

  4. In a bowl, whisk flour, baking powder, and salt.

  5. Add dry ingredients to batter alternately with milk.

  6. Stir in vanilla and gently fold in peaches.

  7. Pour batter into pan.

Cobbler Layer

  1. Mix brown sugar, cinnamon, nutmeg, and melted butter.

  2. Sprinkle evenly over batter.

  3. Bake 75–85 minutes, until a toothpick comes out clean.

  4. Cool 15 minutes, then turn out and cool completely.

Glaze (Optional)

  1. Mix glaze ingredients and drizzle over cooled cake.
