Servings: 4
Prep Time: 15 minutes
Cook Time: 15–20 minutes
Ingredients
-
1 large onion (yellow or white), sliced into 1/4–1/2 inch thick rings
-
1 cup almond flour
-
1/4 cup grated Parmesan cheese
-
1 teaspoon garlic powder
-
1 teaspoon paprika
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
2 large eggs
-
2 tablespoons heavy cream
-
Coconut oil, avocado oil, or olive oil for frying
Optional for extra crispiness:
-
2 tablespoons crushed pork rinds (adds crunch and extra flavor)
Instructions
-
Prepare the onions:
-
Peel the onion and slice into rings about 1/4–1/2 inch thick.
-
Separate the rings carefully and set aside.
-
-
Set up the coating stations:
-
Bowl 1: Whisk eggs with heavy cream.
-
Bowl 2: Mix almond flour, Parmesan cheese, garlic powder, paprika, salt, pepper, and crushed pork rinds if using.
-
-
Coat the onion rings:
-
Dip each onion ring into the egg mixture, letting excess drip off.
-
Press the ring into the almond flour mixture until well coated.
-
Shake off any excess flour mixture.
-
-
Heat the oil:
-
In a skillet or frying pan, add about 1/4 inch of oil over medium heat.
-
Heat until hot but not smoking (around 350°F if using a thermometer).
-
-
Fry the rings:
-
Fry in batches for 2–3 minutes per side, until golden brown and crispy.
-
Avoid overcrowding the pan, which can make them soggy.
-
-
Drain:
-
Remove from the pan and place on a plate lined with paper towels to absorb excess oil.
-
-
Serve:
-
Enjoy hot with a keto-friendly dipping sauce like garlic aioli, ranch, or sugar-free ketchup.
-
Tips for Extra Crispiness
-
Make sure the onion rings are patted dry before coating.
-
Use a combination of almond flour and crushed pork rinds for a crunchier texture.
-
Fry in batches and maintain medium heat so the coating crisps without burning.
