Keto Strawberry Cream Cheese Cobbler

 Servings

Approx 5–6 net carbs per serving (depends on sweetener & strawberries)


Ingredients

Strawberry Filling

  • 3 cups fresh strawberries, hulled & sliced

  • ½ cup granulated erythritol or monk fruit blend

  • 1 tbsp lemon juice

  • ½ tsp vanilla extract

  • ½ tsp ground cinnamon (optional but cozy)

  • ¼ tsp xanthan gum (thickener—don’t skip)


Cream Cheese Layer

  • 8 oz cream cheese, softened

  • ¼ cup powdered erythritol

  • 1 tsp vanilla extract

  • 1 large egg


Cobbler Topping

  • 1 cup almond flour

  • ¼ cup coconut flour

  • ⅓ cup granulated erythritol

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, melted

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon


 Instructions

 Preheat & Prep

  • Preheat oven to 350°F (175°C)

  • Grease an 8×8-inch baking dish (or similar)


 Make the Strawberry Filling

  1. In a bowl, combine:

    • Strawberries

    • Sweetener

    • Lemon juice

    • Vanilla

    • Cinnamon

  2. Sprinkle xanthan gum evenly over the mixture

  3. Toss well and let sit 5–10 minutes to thicken

Pro tip: Sprinkle xanthan slowly to avoid clumps.


 Cream Cheese Layer

  1. Beat cream cheese until smooth

  2. Add powdered sweetener & vanilla

  3. Beat in egg until fully combined

It should be smooth, pourable, and creamy.


 Cobbler Topping

  1. In a bowl, mix:

    • Almond flour

    • Coconut flour

    • Sweetener

    • Baking powder

    • Salt

    • Cinnamon

  2. Stir in melted butter & vanilla

  3. Mixture will be thick and spoonable, not runny


 Assemble

  1. Spread strawberry filling evenly in baking dish

  2. Dollop cream cheese mixture over strawberries (don’t worry about full coverage)

  3. Spoon cobbler topping over everything

 Rustic is good. Cobbler is not supposed to be neat.


 Bake

  • Bake 40–45 minutes

  • Top should be golden brown

  • Center should be set but slightly soft

If browning too fast, tent loosely with foil.


 Cool (Important!)

  • Let rest 15–20 minutes before serving
    This allows it to fully set and thicken.
