🥦 Creamy Vegan Cauliflower Soup (Easy & Cozy)

Ingredients

  • 1 medium cauliflower, chopped

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 2 tbsp olive oil

  • 3 cups vegetable broth

  • 1 cup plant milk (almond, oat, or coconut)

  • Salt & black pepper to taste

  • ½ tsp paprika (optional)

  • ¼ tsp nutmeg (optional, but lovely)

  • Lemon juice (to finish)

Instructions

  1. Heat olive oil in a pot. Sauté onion until soft and translucent.

  2. Add garlic; cook 30 seconds until fragrant.

  3. Add cauliflower and broth. Bring to a boil, then simmer 15–20 minutes until very tender.

  4. Blend until smooth (immersion blender or regular blender).

  5. Stir in plant milk, salt, pepper, paprika, and nutmeg. Simmer 3–5 minutes.

  6. Finish with a squeeze of lemon juice. Taste and adjust.

Serving ideas

  • Drizzle olive oil or chili oil on top

  • Sprinkle roasted chickpeas or croutons

  • Fresh parsley or chives
