🥦 Creamy Vegan Cauliflower Soup (Easy & Cozy)
Ingredients

1 medium cauliflower, chopped

1 onion, chopped

3 garlic cloves, minced

2 tbsp olive oil

3 cups vegetable broth
-
1 cup plant milk (almond, oat, or coconut)

Salt & black pepper to taste

½ tsp paprika (optional)

¼ tsp nutmeg (optional, but lovely)

Lemon juice (to finish)
Instructions

Heat olive oil in a pot. Sauté onion until soft and translucent.

Add garlic; cook 30 seconds until fragrant.

Add cauliflower and broth. Bring to a boil, then simmer 15–20 minutes until very tender.

Blend until smooth (immersion blender or regular blender).

Stir in plant milk, salt, pepper, paprika, and nutmeg. Simmer 3–5 minutes.

Finish with a squeeze of lemon juice. Taste and adjust.
