🥟 Vegan Dumpling Soup (Warm, Comforting & Cozy)

🍲 Ingredients

Soup

  • 1 tbsp sesame oil (optional)

  • 3 cloves garlic, minced

  • 1 tsp grated ginger

  • 6 cups vegetable broth

  • 1–2 tbsp soy sauce or tamari

  • 1 tsp rice vinegar

  • ½ tsp white pepper or black pepper

Add-ins

  • 12–15 vegan dumplings (store-bought or homemade)

  • 1 cup bok choy or napa cabbage, chopped

  • ½ cup mushrooms, sliced

  • 2 green onions, sliced

Optional extras

  • Chili oil 🌶️

  • Corn kernels

  • Spinach

  • Tofu cubes

🔥 Instructions

  1. Build flavor: Heat sesame oil in a pot. Sauté garlic and ginger for 30 seconds until fragrant.

  2. Broth: Add vegetable broth, soy sauce, vinegar, and pepper. Bring to a gentle boil.

  3. Cook dumplings: Drop in dumplings and cook according to package (usually 3–5 min).

  4. Veggies: Add mushrooms and bok choy; simmer 2–3 min until tender.

  5. Finish: Taste and adjust salt. Top with green onions and chili oil if you like heat.
