Keto Cherry Cheesecake Fluff

Ingredients

Cheesecake Fluff Base

  • 8 oz (225 g) full-fat cream cheese, softened

  • 1 cup heavy whipping cream, very cold

  • 1/2 cup powdered erythritol or allulose
    (adjust to taste)

  • 1 tsp vanilla extract

  • 1 tbsp fresh lemon juice

  • Pinch of salt

Keto Cherry Swirl

  • 1 cup fresh or frozen cherries, pitted and chopped
    (measure carefully; cherries are higher-carb)

  • 2–3 tbsp powdered erythritol or allulose

  • 1 tsp lemon juice

  • 1/2 tsp vanilla extract

  • 1/8 tsp xanthan gum (optional, for thickness)

Optional Add-Ins

  • 1/4 tsp almond extract (classic cheesecake flavor)

  • 1–2 tbsp sour cream (extra tang)

  • Keto graham crumbs or crushed keto cookies for topping


Instructions

1. Make the cherry compote

  • Add cherries, sweetener, and lemon juice to a small saucepan.

  • Cook over medium heat, stirring frequently, until cherries break down and release juices (8–10 minutes).

  • Mash lightly with a fork.

  • Stir in vanilla.

  • Optional: sprinkle xanthan gum evenly while stirring to thicken.

  • Remove from heat and cool completely. The mixture will thicken more as it cools.

2. Whip the cream

  • In a cold bowl, beat heavy cream until stiff peaks form.

  • Set aside in the refrigerator.

3. Make the cheesecake base

  • In a separate bowl, beat cream cheese until completely smooth.

  • Add powdered sweetener, vanilla, lemon juice, salt, and optional almond extract or sour cream.

  • Beat until creamy and fluffy, scraping down the bowl as needed.

4. Combine

  • Gently fold the whipped cream into the cream cheese mixture in two additions.

  • Use a spatula and fold carefully to keep the mixture light and airy.

5. Swirl in cherries

  • Spoon cherry compote over the fluff.

  • Fold lightly for a swirl effect, or fully mix for uniform flavor.

6. Chill

  • Refrigerate at least 1 hour before serving for best texture and flavor.
