Caramelized Sweet Potatoes with Maple, Feta & Crunchy Walnuts — WW-Friendly Version

This lighter version keeps the rich, sweet-and-savory flavor combination while controlling oil, maple syrup, and cheese to stay WW-friendly.

Ingredients

  • 3 medium sweet potatoes (about 2 lbs), peeled and cut into 1-inch cubes

  • 2 teaspoons olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon smoked paprika (optional)

  • 1 1/2 tablespoons pure maple syrup

  • 1 tablespoon water (to stretch the maple flavor with fewer points)

  • 1/3 cup reduced-fat feta cheese, crumbled

  • 1/4 cup chopped walnuts, toasted

  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, and smoked paprika until evenly coated.

  3. Spread the sweet potatoes in a single layer on the baking sheet. Roast for 20 minutes.

  4. Remove from oven, flip the potatoes, and return to the oven for another 10–15 minutes, until tender and browned at the edges.

  5. In a small bowl, mix maple syrup with 1 tablespoon water. Drizzle evenly over the hot roasted sweet potatoes and toss gently to coat. The heat will help the maple glaze lightly caramelize.

  6. Transfer to a serving dish. Sprinkle with reduced-fat feta and toasted walnuts. Garnish with fresh parsley if desired.

  7. Serve warm.
