Ingredients

Dough

  • 1 1/2 cups (150 g) finely ground almond flour

  • 1 1/2 cups (170 g) shredded low-moisture mozzarella

  • 2 tablespoons cream cheese

  • 1 large egg

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

Garlic Butter Topping

  • 3 tablespoons unsalted butter, melted

  • 2–3 cloves garlic, finely minced

  • 1 tablespoon fresh parsley, finely chopped

  • 2 tablespoons grated Parmesan (optional but recommended)

  • Pinch of salt

Step-by-Step Instructions

1. Preheat Oven

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.


2. Melt the Cheese

  1. In a microwave-safe bowl, combine shredded mozzarella and cream cheese.

  2. Microwave for 45 seconds. Stir.

  3. Microwave another 30–45 seconds until fully melted and smooth when stirred.

Work quickly while the cheese is hot and pliable.


3. Form the Dough

  1. Add almond flour, baking powder, and salt to the melted cheese mixture.

  2. Add the egg.

  3. Mix thoroughly until a uniform dough forms.
    You may need to knead it slightly with clean hands once cool enough to handle.

Tip: If dough becomes stiff, microwave for 10–15 seconds to soften.


4. Shape the Bread

  1. Place dough on parchment paper.

  2. Roll into an oval or rectangle about 1/4 inch thick.

  3. For crispier edges, keep slightly thinner. For softer bread, keep slightly thicker.


5. First Bake

Bake plain dough for 8–10 minutes until lightly golden on top.


6. Prepare Garlic Butter

While baking:

  1. Melt butter.

  2. Stir in minced garlic, parsley, and a pinch of salt.

  3. Let sit for 5 minutes to infuse flavor.


7. Add Topping & Finish Baking

  1. Remove bread from oven.

  2. Brush generously with garlic butter.

  3. Sprinkle Parmesan evenly over top.

  4. Return to oven for 5–8 more minutes, until golden and slightly crisp on edges.

Optional: Broil 1–2 minutes for extra browning (watch closely).


8. Rest & Slice

Let cool 5 minutes before slicing into strips or squares.
