Vegan Bean Burrito

Ingredients

Bean Filling

  • 2 cups cooked beans (black beans, kidney beans, or pinto beans)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (adjust to taste)
  • ½ teaspoon black pepper
  • Salt to taste
  • 2 tablespoons tomato paste or ½ cup crushed tomatoes
  • ¼ cup water

Rice (Optional but Recommended)

  • 1 cup cooked rice
  • 1 tablespoon lime or lemon juice
  • 2 tablespoons chopped coriander (cilantro)
  • Salt to taste

Other Fillings

  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • ½ cup corn (optional)
  • 1 avocado, sliced (or simple guacamole)
  • Vegan yogurt or plant-based sour cream (optional)

Burrito Assembly

  • 4 large flour tortillas (or whole wheat wraps)

Instructions

1. Prepare the Bean Filling

Heat olive oil in a pan over medium heat. Add chopped onion and cook for 3–4 minutes until soft. Add garlic and cook for 1 minute.

Add cumin, smoked paprika, chili powder, salt, and pepper. Stir for about 30 seconds to release aroma.

Add the cooked beans and mash some of them lightly for a creamy texture while keeping some whole.

Stir in tomato paste (or crushed tomatoes) and water. Let it simmer for 5–7 minutes until thick and well combined. Adjust seasoning if needed.


2. Prepare the Rice

In a bowl, mix cooked rice with lime or lemon juice, chopped coriander, and a pinch of salt. Set aside.


3. Prepare Fresh Fillings

Chop lettuce, tomatoes, and avocado. If making quick guacamole, mash avocado with salt and a little lemon juice.


4. Warm the Tortillas

Heat tortillas on a dry pan for 20–30 seconds on each side until soft and flexible.


5. Assemble the Burrito

Place a tortilla on a flat surface. Add:

  • A layer of rice
  • A generous spoon of bean filling
  • Lettuce, tomato, corn
  • Avocado or vegan yogurt

Do not overfill.


6. Fold the Burrito

Fold the sides inward, then roll tightly from the bottom to form a sealed wrap.


7. Optional Toasting

Place the wrapped burrito seam-side down on a hot pan. Toast for 2–3 minutes on each side until lightly crispy.


Serving Suggestions

  • Serve with salsa, hot sauce, or extra vegan yogurt
  • Pair with a side of chips or a simple salad

  • Add sautéed bell peppers and onions for a fajita-style burrito
  • Use quinoa instead of rice for extra protein
  • Add vegan cheese for a richer texture
  • Make it spicy with jalapeños or chili sauce

Tips

  • Slightly mash beans for better texture and binding
  • Avoid overfilling to prevent tearing
  • Warm tortillas properly so they roll easily
