Keto Big Mac Chaffle

Ingredients
Chaffle “Buns”
- 1 cup shredded mozzarella cheese
- 1 large egg
- 2 tablespoons almond flour
- ½ teaspoon baking powder
- Pinch of salt
Burger Filling
- 250–300 g ground beef
- Salt and black pepper to taste
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Big Mac–Style Sauce
- 3 tablespoons mayonnaise (sugar-free)
- 1 tablespoon sugar-free ketchup
- 1 teaspoon yellow mustard
- 1 tablespoon finely chopped pickles
- ½ teaspoon vinegar
- ½ teaspoon paprika
- Pinch of garlic powder
Toppings
- Lettuce, shredded
- 2–3 slices cheddar cheese
- Pickles, sliced
- Optional: finely chopped onions
Instructions
1. Make the Chaffles
Preheat a waffle maker.
In a bowl, mix mozzarella, egg, almond flour, baking powder, and salt until combined.
Place half the mixture into the waffle maker and cook for 3–5 minutes until golden and firm. Repeat to make 2–3 chaffles. Let them cool slightly so they firm up like buns.
2. Cook the Beef Patties
Divide ground beef into 2–3 thin patties.
Season with salt, pepper, garlic powder, and onion powder.
Cook in a pan over medium-high heat for 3–4 minutes per side until browned and cooked through. Add cheese slices on top during the last minute so they melt.
3. Prepare the Sauce
In a small bowl, mix mayonnaise, sugar-free ketchup, mustard, pickles, vinegar, paprika, and garlic powder until smooth. Taste and adjust seasoning.
4. Assemble the Keto Big Mac
Layer like a classic Big Mac:
- Chaffle base
- Beef patty with melted cheese
- Sauce
- Lettuce, pickles, onions
- Second chaffle (middle layer)
- Another beef patty and sauce
- Top chaffle
Press gently to hold everything together.
5. Optional Toasting
For extra structure, lightly toast the assembled chaffle burger in a pan for 1–2 minutes per side.
