Vegan Blueberry Quesadillas

Ingredients

Base:

  • 4 small tortillas (use vegan, flour or whole wheat)

Filling:

  • 1 cup fresh blueberries (or frozen, thawed)
  • 2 tablespoons maple syrup (or to taste)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon

Creamy layer:

  • 1/2 cup vegan cream cheese
    or
  • 1/2 cup thick coconut yogurt

Optional additions:

  • 1 tablespoon chia seeds
  • 1 tablespoon crushed nuts (almonds or walnuts)
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the blueberry filling

  • In a small pan over medium heat, add blueberries, maple syrup, lemon juice, and cinnamon.
  • Cook for 5–7 minutes, stirring occasionally, until the blueberries soften and become slightly jammy.
  • Lightly mash some berries for texture.
  • Remove from heat and let it cool slightly.

2. Prepare the creamy layer

  • In a bowl, mix vegan cream cheese (or coconut yogurt) with vanilla extract if using.
  • Stir until smooth.

3. Assemble the quesadillas

  • Lay tortillas flat.
  • Spread a layer of the creamy mixture on one side.
  • Add a spoonful of blueberry filling on top.
  • Sprinkle chia seeds or nuts if using.
  • Fold each tortilla in half.

4. Cook the quesadillas

  • Heat a non-stick pan over medium-low heat.
  • Place quesadillas in the pan and cook for 2–3 minutes per side until lightly golden and slightly crispy.

5. Serve

  • Remove from pan and let cool slightly.
  • Slice into wedges and serve warm.
