Beef

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp oil

Vegetables

  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced

Sauce

  • 1/3 cup soy sauce
  • 1/4 cup beef broth
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional but adds depth)
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp cornstarch + 2 tbsp water (slurry)
  • Black pepper to taste

Instructions

  1. Marinate beef
Toss sliced steak with soy sauce, cornstarch, and oil. Let sit 10–15 minutes.
  2. Sear the beef
Heat a wok or large skillet on high heat until very hot.
Sear beef in batches for 1–2 minutes until browned. Remove and set aside.

Add garlic and ginger and cook 30 seconds.
  4. Add sauce
Mix sauce ingredients (except slurry) and pour into the pan. Bring to a simmer.
  5. Thicken
Stir in cornstarch slurry and cook until sauce turns glossy and slightly thick.
  6. Combine
Return beef to the pan and toss everything together for 1–2 minutes until coated.
  7. Finish
Drizzle with sesame oil and a pinch of black pepper.
