Blueberry Cream Cheese Loaf

Ingredients

For the loaf:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup blueberries (fresh or frozen)

For the cream cheese layer:

  • 200g cream cheese (softened)
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla

Method

  1. Prep
    Preheat oven to 180°C (350°F). Grease and line a loaf pan.
  2. Make cream cheese filling
    Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
  3. Prepare batter
    • In one bowl: mix flour, baking powder, and salt
    • In another: cream butter and sugar until light
    • Add eggs one at a time, then vanilla
    • Mix in dry ingredients alternating with milk
  4. Add blueberries
    Toss blueberries in a little flour (prevents sinking), then fold into batter.
  5. Layer
    • Pour half the batter into the pan
    • Add cream cheese mixture
    • Top with remaining batter
  6. Bake
    Bake for 50–60 minutes until a toothpick comes out mostly clean.
  7. Cool
    Let it cool completely before slicing—this helps the cream layer set.

Tips

  • Frozen blueberries? Don’t thaw—use straight from the freezer
  • For extra flavor: add lemon zest to the batter
  • Want a bakery finish? Sprinkle a little sugar on top before baking
