Creamy Chicken & Mushroom Stroganoff
A rich, cozy skillet dinner with tender chicken, savory mushrooms, garlic, onions, and a creamy stroganoff sauce served over noodles, rice, or mashed potatoes.

Ingredients
Chicken
- 1½ lbs boneless skinless chicken breasts or thighs
- Salt and black pepper
- 1 tsp paprika
- 2 tbsp flour
- 2 tbsp olive oil or butter
Vegetables
- 1 medium onion, thinly sliced
- 16 oz mushrooms, sliced
- cremini or baby bella work great
- 3 cloves garlic, minced
Sauce
- 2 tbsp butter
- 2 tbsp flour
- 2 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- ½ tsp thyme
- 1 cup sour cream
- ½ cup heavy cream (optional for richer sauce)
For Serving
Choose one:
- egg noodles
- mashed potatoes
- rice
- buttered pasta
- cauliflower mash
Garnish:
- fresh parsley
- cracked black pepper
Instructions
1. Prep chicken
Slice chicken into strips or bite-sized pieces.
Season with:
- salt
- pepper
- paprika
Lightly toss with flour.
2. Sear chicken
Heat oil in large skillet over medium-high heat.
Cook chicken 4–5 minutes until golden and mostly cooked through.
Remove and set aside.
3. Cook mushrooms and onions
In same skillet add:
- butter
- onions
Cook 3–4 minutes.
Add mushrooms and cook 6–8 minutes until browned and moisture evaporates.
Add garlic and cook 30 seconds.
4. Build sauce
Sprinkle in flour and stir 1 minute.
Slowly whisk in chicken broth.
Add:
- Worcestershire
- Dijon
- thyme
Simmer 3–5 minutes until slightly thickened.
5. Finish creamy sauce
Reduce heat to low.
Stir in:
- sour cream
- heavy cream if using
Do NOT boil after adding sour cream.
6. Return chicken
Add chicken back to skillet.
Simmer gently 3–5 minutes until fully cooked and sauce is creamy.
Taste and adjust seasoning.
Serving Ideas
Serve over:
- buttered egg noodles
- garlic mashed potatoes
- rice
- roasted potatoes
Top with parsley and extra black pepper.

- peas
- caramelized onions
- parmesan
- white wine splash
Lighter Version
Use:
- Greek yogurt instead of sour cream
- reduced-fat sour cream
- less butter
- chicken breast instead of thighs
