WW Cheesy Beef Taco Pockets
A lighter, Weight Watchers–friendly version of cheesy taco pockets with seasoned beef, melty cheese, and a golden crust. Great for meal prep, lunch, or easy dinners.

- 1 lb lean ground beef (93% lean recommended)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1/3 cup salsa

- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
Cheese
- 1 cup reduced-fat shredded cheddar or Mexican blend

Step-by-Step Instructions
1. Make the Filling
Heat skillet over medium heat.
Cook:
- Ground beef
- Onion
Until beef is browned.
Drain excess grease if needed.
Add:
- Garlic
- Tomato paste
- Salsa
- Spices
Cook:
- 2–3 more minutes
Mixture should be thick, not watery.
Cool slightly before assembling.
2. Prepare Dough
Crescent Dough Method
Separate dough into rectangles.
Pinch seams closed.
2-Ingredient Dough Method
Mix:
- Self-rising flour
- Greek yogurt
Until shaggy.
Knead:
- 3–5 minutes
Roll into rectangles or circles.
3. Assemble Taco Pockets
Add to center of each:
- Taco meat
- Cheese
Do not overfill.
Fold dough over.
Seal edges firmly using fork tines.
Cut small vent slits on top.
4. Brush & Bake
Brush tops with egg wash.
Bake at:
- 200°C / 400°F
For:
- 14–18 minutes
Until:
- Golden brown
- Crispy outside
Optional Air Fryer Method
Air fry at:
- 190°C / 375°F
For:
- 8–10 minutes
Flip halfway if needed.
