Pound Cake

1Β½ cups unsalted butter, softened

2Β½ cups sugar

6 large eggs, room temperature

3 cups all-purpose flour

Β½ tsp baking powder

Β½ tsp salt

1 cup milk

1 tbsp vanilla extract

2 cups peaches, peeled & chopped (fresh or canned, well drained)
Cobbler Topping

Β½ cup brown sugar
-
1 tsp cinnamon
-
ΒΌ tsp nutmeg

2 tbsp melted butter
Optional Glaze

1 cup powdered sugar
-
2β3 tbsp milk or peach juice

Β½ tsp vanilla

Preheat oven to 170Β°C / 325Β°F. Grease and flour a bundt or loaf pan.

Cream butter & sugar until light and fluffy.

Add eggs one at a time, beating well after each.

In a bowl, whisk flour, baking powder, and salt.

Add dry ingredients to batter alternately with milk.

Stir in vanilla and gently fold in peaches.

Pour batter into pan.
Cobbler Layer

Mix brown sugar, cinnamon, nutmeg, and melted butter.

Sprinkle evenly over batter.

Bake 75β85 minutes, until a toothpick comes out clean.

Cool 15 minutes, then turn out and cool completely.
Glaze (Optional)

Mix glaze ingredients and drizzle over cooled cake.
