Mexican Street Corn White Chicken Chili
Ingredients
4 boneless, skinless chicken breasts
1 yellow onion, chopped
1 jalapeno, diced
4 cups Chicken Bone Broth
1.5 cups sour cream
1/2 cup shredded monterey jack cheese, (I used a blend of monterey jack and mild cheddar)
4 cloves of garlic, minced
1/2 tablespoon dried Oregano
1/2 teaspoon Chili Powder
2 cups frozen sweet white corn
1/2 cup fresh cilantro, chopped
1 lime, juice
3 tablespoons cornstarch
3 tablespoons water
Optional Toppings
cotija cheese
bacon crumbles
tortilla strips
sliced avocado
Olive Oil

My “ZERO” point started out White Chicken Chilly. It changed colors due to all the beans. I put it in the crockpot yesterday and it cooked on low for today It is supposed to be cold and rainy. Used what I had in house.

3 cups of chicken broth ( watered down)
Salt and pepper to your liking
1/2 teaspoon garlic powder, onion powder,cucum
1/2 cup diced onion
I put chicken and everything else in the crockpot and cooked on low for six hours. The house smells so good yesterday and today . Free points loads of protein. Yum! My hubby had rice in his two bowls ( he isn’t on program). I ate mine by itself.
