Strawberry Cheesecake Wonton Bites

Strawberry cheesecake wonton bites are the perfect mix of crisp and creamy, delivering big dessert flavor in a small, irresistible package. Each bite starts with a golden, crunchy wonton shell that shatters lightly when you bite into it, giving way to a smooth, lightly sweetened cheesecake filling. The strawberry topping adds a bright, fruity contrast that keeps the dessert from feeling heavy.

What makes these bites especially appealing is how playful and elegant they are at the same time. They’re simple enough for casual gatherings but look impressive on a dessert tray. The warm, crispy wonton paired with the cool, creamy filling creates a beautiful texture contrast, while the strawberries bring freshness and color. They’re best enjoyed shortly after assembling, when every element is at its peak.

Ingredients (Makes 18–24 bites)

Wonton Shells

  • 18–24 wonton wrappers

  • Cooking spray or melted butter

Cheesecake Filling

  • 8 ounces cream cheese, softened

  • â…“ cup granulated sugar

  • 1 teaspoon vanilla extract

  • ½ teaspoon lemon juice (optional, for brightness)

Strawberry Topping

  • 1 cup fresh strawberries, finely diced

  • 2 tablespoons sugar

  • 1 teaspoon lemon juice

Optional Garnishes

  • Powdered sugar

  • Whipped cream

  • Mint leaves

Instructions

1. Prepare the Wonton Shells

Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin. Press one wonton wrapper into each cup, gently forming it to create a small shell. Lightly spray or brush the wrappers with melted butter to help them crisp and brown evenly.

Bake for 8–10 minutes, or until the wonton shells are golden and crisp. Remove from the oven and let them cool completely in the pan.

2. Make the Cheesecake Filling

In a medium bowl, beat the softened cream cheese until smooth and creamy. Add the sugar, vanilla extract, and lemon juice. Continue mixing until the filling is light, fluffy, and completely smooth, with no lumps.

3. Prepare the Strawberry Topping

In a small bowl, combine the diced strawberries, sugar, and lemon juice. Stir gently and let the mixture sit for 10–15 minutes. This allows the strawberries to release their juices and form a light syrup.

4. Assemble the Bites

Once the wonton shells are fully cooled, spoon or pipe the cheesecake filling into each shell, filling them about three-quarters full. Top with a small spoonful of the strawberry mixture, letting a little of the syrup drizzle over the filling.

5. Serve

Garnish with a dusting of powdered sugar, a dollop of whipped cream, or a small mint leaf if desired. Serve immediately for the best texture.
