No-Bake Cottage Cheese Brownie Batter Protein Bites
These protein bites taste like spoon-licking brownie batter but are secretly packed with protein and nourishing ingredients. Cottage cheese blends into a smooth, creamy base that disappears into the chocolate, leaving behind a rich, fudgy texture without any chalkiness. The result is indulgent and dessert-like, yet light enough to enjoy as a snack or post-workout treat.
What makes these bites special is how balanced they feel. The cocoa provides deep chocolate flavor, the sweetener keeps things just sweet enough, and the cottage cheese adds body and creaminess while boosting protein. Because they’re no-bake, the flavors stay fresh and bold, and the texture remains soft and truffle-like rather than dry or crumbly.
Ingredients (Makes about 12 bites)
-
1 cup full-fat cottage cheese
-
3 tablespoons unsweetened cocoa powder
-
2–3 tablespoons maple syrup or honey
(or a keto sweetener like monk fruit/erythritol to taste) -
½ teaspoon vanilla extract
-
¼ teaspoon salt
-
½ cup oat flour or almond flour
-
¼ cup protein powder (chocolate or vanilla)
-
2 tablespoons nut butter (peanut, almond, or sunflower)
-
Optional: mini chocolate chips, coconut flakes, or chopped nuts
Instructions
1. Blend the Base
Add the cottage cheese to a blender or food processor and blend until completely smooth. This step is important—it removes any curd texture and creates a creamy, brownie-batter-like foundation.
2. Add Flavor
Blend in the cocoa powder, sweetener, vanilla extract, and salt. The mixture should look glossy and deeply chocolatey, with a rich aroma similar to classic brownie batter.
3. Thicken the Batter
Transfer the mixture to a bowl. Stir in the oat flour (or almond flour), protein powder, and nut butter. Mix until a thick, scoopable dough forms. If the mixture feels too soft, add a tablespoon more flour; if too thick, add a splash of milk or water.
4. Shape the Bites
Using a small cookie scoop or spoon, roll the mixture into bite-sized balls. If desired, roll them in cocoa powder, coconut flakes, or crushed nuts for extra texture.
5. Chill
Place the protein bites on a lined plate or tray and refrigerate for 20–30 minutes to firm up. Once chilled, they hold their shape beautifully.
