2 large lion’s mane mushrooms, cleaned and trimmed

3 tbsp olive oil (or avocado oil)

2 cloves garlic, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tbsp soy sauce or tamari

½ tsp smoked paprika

Salt and black pepper, to taste

Prepare the mushrooms
Gently clean the lion’s mane mushrooms with a damp cloth and slice them into 1-inch thick “steaks.” Lion’s mane has a meaty texture that works beautifully when cooked like a steak. -
Marinate
In a small bowl, mix olive oil, garlic, thyme, soy sauce, smoked paprika, salt, and pepper. Brush or rub this mixture onto both sides of the mushroom steaks. Let them sit for 10–15 minutes to absorb the flavors. -
Cook the mushrooms
Heat a skillet or grill pan over medium-high heat. Once hot, add the mushrooms and cook 3–4 minutes per side until golden brown and slightly crispy. Lion’s mane soaks up flavors like a sponge and develops a rich, umami taste when seared. -
Serve
