Lion’s Mane Mushroom Steaks

Ingredients

  • 2 large lion’s mane mushrooms, cleaned and trimmed

  • 3 tbsp olive oil (or avocado oil)

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • 1 tbsp soy sauce or tamari

  • ½ tsp smoked paprika

  • Salt and black pepper, to taste

  • Optional garnish: fresh parsley or microgreens

Instructions

  1. Prepare the mushrooms
Gently clean the lion’s mane mushrooms with a damp cloth and slice them into 1-inch thick “steaks.” Lion’s mane has a meaty texture that works beautifully when cooked like a steak.

  2. Marinate
In a small bowl, mix olive oil, garlic, thyme, soy sauce, smoked paprika, salt, and pepper. Brush or rub this mixture onto both sides of the mushroom steaks. Let them sit for 10–15 minutes to absorb the flavors.

  3. Cook the mushrooms
Heat a skillet or grill pan over medium-high heat. Once hot, add the mushrooms and cook 3–4 minutes per side until golden brown and slightly crispy. Lion’s mane soaks up flavors like a sponge and develops a rich, umami taste when seared.

  4. Serve
Remove from the pan and let rest for a minute. Garnish with fresh parsley or microgreens. Serve with roasted vegetables, a side salad, or your favorite vegan gravy.

  5. Lion’s mane mushrooms have a unique, meaty texture that makes them an incredible vegan alternative to steak. When seared, they develop a golden crust while remaining tender inside. The garlic, soy sauce, and smoked paprika marinade enhances their natural umami, creating a deeply savory flavor that feels indulgent without being heavy.

This dish is simple, elegant, and versatile — perfect for weeknight dinners or a special occasion. It pairs beautifully with roasted vegetables, mashed potatoes, or a hearty grain for a satisfying, plant-based meal.
