Chicken Zucchini Skillet
Ingredients

1 lb chicken breast or thighs, bite-sized

2–3 zucchini, sliced into half-moons

2 tbsp olive oil

3 cloves garlic, minced

1 tsp Italian seasoning
-
½ tsp paprika

Salt & black pepper, to taste

Optional: red pepper flakes, lemon juice, Parmesan
Instructions

Season chicken with salt, pepper, paprika, and Italian seasoning.

Heat 1 tbsp oil in a large skillet over medium-high heat.

Cook chicken 5–7 minutes until golden and cooked through. Remove and set aside.

Add remaining oil and sauté zucchini 3–4 minutes until tender-crisp.

Add garlic and cook 30 seconds.

Return chicken to skillet, toss everything together.

Finish with lemon juice or Parmesan if desired.
