Chicken Zucchini Skillet

Ingredients

  • 1 lb chicken breast or thighs, bite-sized

  • 2–3 zucchini, sliced into half-moons

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • Optional: red pepper flakes, lemon juice, Parmesan


Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.

  2. Heat 1 tbsp oil in a large skillet over medium-high heat.

  3. Cook chicken 5–7 minutes until golden and cooked through. Remove and set aside.

  4. Add remaining oil and sauté zucchini 3–4 minutes until tender-crisp.

  5. Add garlic and cook 30 seconds.

  6. Return chicken to skillet, toss everything together.

  7. Finish with lemon juice or Parmesan if desired.


Variations

  • Creamy: Add a splash of cream or cream cheese.

  • Asian-style: Use soy sauce + sesame oil.

  • Mediterranean: Add cherry tomatoes and olives.
