Keto Meaty Cabbage Soup

🥣 Ingredients (serves 4–6)

  • 1 tbsp olive oil or butter

  • 1 lb (450 g) ground beef, chicken, or turkey

  • 1 small onion, finely chopped (optional but keto-friendly in small amount)

  • 3 cloves garlic, minced

  • 4 cups green cabbage, chopped

  • 1 can (400 g) diced tomatoes (optional; omit for very strict keto)

  • 4 cups beef or chicken broth

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp dried oregano or thyme

  • Salt, to taste

Optional add-ins:

  • Mushrooms

  • Zucchini

  • Spinach

  • Chili flakes


🍳 Instructions

  1. Brown the meat
    Heat oil in a pot. Add ground meat and cook until browned.
    Season lightly with salt and pepper.

  2. Add aromatics
    Stir in onion (if using) and garlic. Cook 1–2 minutes.

  3. Build the soup
    Add cabbage, tomatoes (if using), broth, paprika, oregano, and black pepper.

  4. Simmer
    Bring to a boil, then reduce heat and simmer 20–25 minutes until cabbage is tender.

  5. Taste & finish
    Adjust salt and add chili flakes if desired.
