Keto Meaty Cabbage Soup
🥣 Ingredients (serves 4–6)

1 tbsp olive oil or butter

1 lb (450 g) ground beef, chicken, or turkey

1 small onion, finely chopped (optional but keto-friendly in small amount)

3 cloves garlic, minced

4 cups green cabbage, chopped

1 can (400 g) diced tomatoes (optional; omit for very strict keto)

4 cups beef or chicken broth
-
1 tsp paprika
-
½ tsp black pepper
-
½ tsp dried oregano or thyme
-
Salt, to taste
Optional add-ins:

Mushrooms
-
Zucchini
-
Spinach
-
Chili flakes
🍳 Instructions

Brown the meat
Heat oil in a pot. Add ground meat and cook until browned.
Season lightly with salt and pepper. -
Add aromatics
Stir in onion (if using) and garlic. Cook 1–2 minutes. -
Build the soup
Add cabbage, tomatoes (if using), broth, paprika, oregano, and black pepper. -
Simmer
Bring to a boil, then reduce heat and simmer 20–25 minutes until cabbage is tender. -
Taste & finish
Adjust salt and add chili flakes if desired.
