Vegan Pineapple Fried Rice
🧾 Ingredients (2–3 servings)

3 cups cooked rice (cold, day-old works best)

1 cup pineapple chunks (fresh or canned, drained)

2 tbsp oil (sesame or vegetable)

1 small onion, chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrot, peas, bell pepper)

½ cup green onions, sliced

2–3 tbsp soy sauce or tamari

1 tsp curry powder (optional but traditional)

½ tsp black pepper

Salt to taste

1–2 tbsp roasted cashews or peanuts (optional)

Lime wedges (for serving)
👩🍳 Instructions

Heat oil in a large pan or wok over medium-high heat.

Sauté onion and garlic until fragrant.

Add vegetables and cook 2–3 minutes.

Stir in pineapple and cook 1 minute.

Add rice, breaking up clumps.

Season with soy sauce, curry powder, pepper, and salt.

Toss well and stir-fry 3–4 minutes until hot.

Finish with green onions and nuts.
