Vegan Pineapple Fried Rice

🧾 Ingredients (2–3 servings)

  • 3 cups cooked rice (cold, day-old works best)

  • 1 cup pineapple chunks (fresh or canned, drained)

  • 2 tbsp oil (sesame or vegetable)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 cup mixed vegetables (carrot, peas, bell pepper)

  • ½ cup green onions, sliced

  • 2–3 tbsp soy sauce or tamari

  • 1 tsp curry powder (optional but traditional)

  • ½ tsp black pepper

  • Salt to taste

  • 1–2 tbsp roasted cashews or peanuts (optional)

  • Lime wedges (for serving)


👩‍🍳 Instructions

  1. Heat oil in a large pan or wok over medium-high heat.

  2. Sauté onion and garlic until fragrant.

  3. Add vegetables and cook 2–3 minutes.

  4. Stir in pineapple and cook 1 minute.

  5. Add rice, breaking up clumps.

  6. Season with soy sauce, curry powder, pepper, and salt.

  7. Toss well and stir-fry 3–4 minutes until hot.

  8. Finish with green onions and nuts.


🍽️ Serving Ideas

  • Serve with chili sauce or sriracha

  • Garnish with lime juice and fresh coriander

  • Great as a main or side dish
