Vegan Ice Cream Sandwiches
🧾 Ingredients (6–8 sandwiches)
🍪 Vegan Cookies

1 cup all-purpose flour

½ cup brown sugar

¼ cup white sugar

¼ cup coconut oil (melted) or vegan butter

3 tbsp plant milk (almond, soy, oat)

1 tsp vanilla extract

½ tsp baking soda

Pinch of salt

½ cup vegan chocolate chips
(Shortcut: use store-bought vegan cookies)
🍦 Filling

1½–2 cups vegan ice cream (vanilla, chocolate, or any flavor)
👩🍳 Instructions
1️⃣ Make Cookies

Preheat oven to 180°C / 350°F.

Mix sugars, coconut oil, plant milk, and vanilla.

Stir in flour, baking soda, and salt.

Fold in chocolate chips.

Scoop dough onto a lined baking tray and flatten slightly.

Bake 10–12 minutes until just set.

Cool completely.
2️⃣ Assemble Sandwiches

Let ice cream soften slightly.

Scoop ice cream onto the flat side of one cookie.

Top with another cookie and gently press.

Freeze 30–60 minutes until firm.

Roll edges in chopped nuts
