Vegan Mushroom Balls
🧾 Ingredients (makes ~15–18 balls)

2 cups mushrooms, finely chopped (button or cremini)

½ cup breadcrumbs (or oats, pulsed)

¼ cup onion, finely chopped

2 cloves garlic, minced

2 tbsp chopped parsley or coriander
-
2 tbsp nutritional yeast (optional, cheesy flavor)

1 tbsp soy sauce or tamari
-
½ tsp black pepper
-
½ tsp paprika or chili flakes
-
Salt to taste

2–3 tbsp flour (or chickpea flour)

1 tbsp oil (plus more for frying or baking)
👩🍳 Instructions

Heat 1 tbsp oil in a pan.

Sauté onion and garlic until soft.

Add mushrooms and cook until moisture evaporates.

Turn off heat and let mixture cool slightly.

Transfer to a bowl. Add breadcrumbs, flour, soy sauce, spices, herbs, and nutritional yeast.

Mix well and form small balls.

Cook your way:

Pan-fry: shallow fry until golden on all sides

Bake: 190°C / 375°F for 20–25 minutes, flipping halfway

Air-fry: 180°C / 360°F for 12–15 minutes
