Vegan Mushroom Balls

🧾 Ingredients (makes ~15–18 balls)

  • 2 cups mushrooms, finely chopped (button or cremini)

  • ½ cup breadcrumbs (or oats, pulsed)

  • ¼ cup onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp chopped parsley or coriander

  • 2 tbsp nutritional yeast (optional, cheesy flavor)

  • 1 tbsp soy sauce or tamari

  • ½ tsp black pepper

  • ½ tsp paprika or chili flakes

  • Salt to taste

  • 2–3 tbsp flour (or chickpea flour)

  • 1 tbsp oil (plus more for frying or baking)


👩‍🍳 Instructions

  1. Heat 1 tbsp oil in a pan.

  2. Sauté onion and garlic until soft.

  3. Add mushrooms and cook until moisture evaporates.

  4. Turn off heat and let mixture cool slightly.

  5. Transfer to a bowl. Add breadcrumbs, flour, soy sauce, spices, herbs, and nutritional yeast.

  6. Mix well and form small balls.

  7. Cook your way:

    • Pan-fry: shallow fry until golden on all sides

    • Bake: 190°C / 375°F for 20–25 minutes, flipping halfway

    • Air-fry: 180°C / 360°F for 12–15 minutes


🍽️ Serving Ideas

  • With marinara or vegan garlic sauce

  • In pita or wraps

  • Over rice or noodles

  • As vegan “meatballs” with spaghetti 🍝
