Vegan Spinach Balls

🧾 Ingredients (makes ~16–18 balls)

  • 2 cups spinach, finely chopped (fresh or frozen & well-squeezed)

  • ½ cup breadcrumbs or rolled oats (blended)

  • ¼ cup onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp nutritional yeast (optional, cheesy flavor)

  • 2 tbsp chickpea flour or all-purpose flour

  • 1 tbsp soy sauce or salt to taste

  • ½ tsp black pepper

  • ½ tsp paprika or chili flakes

  • 2 tbsp fresh herbs (parsley or coriander)

  • 1 tbsp olive oil


👩‍🍳 Instructions

  1. If using fresh spinach, lightly sauté or steam, then squeeze out all excess water.

  2. Heat oil in a pan and sauté onion and garlic until soft.

  3. Add spinach and cook 1–2 minutes. Let cool.

  4. Transfer mixture to a bowl and add breadcrumbs, flour, nutritional yeast, soy sauce, spices, and herbs.

  5. Mix well and form small balls.

  6. Cook your way:

    • Bake: 190°C / 375°F for 20–25 minutes, flipping halfway

    • Air-fry: 180°C / 360°F for 12–15 minutes

    • Pan-fry: shallow fry until golden on all sides


🍽️ Serving Ideas

  • With vegan yogurt dip or hummus

  • In wraps or pita

  • As a protein side with salad

  • Tossed in marinara as vegan “meatballs”
