Vegan Chocolate Lasagna

2 cups vegan chocolate sandwich cookies (like Oreos, filling included)

5 tbsp melted coconut oil or vegan butter
π₯₯ Cream Layer

1Β½ cups vegan cream cheese

Β½ cup powdered sugar (or powdered coconut sugar)

1 tsp vanilla extract

1 cup whipped coconut cream (chilled & whipped)
π« Chocolate Pudding Layer

2 cups plant milk (almond/soy/oat)

ΒΌ cup cornstarch

β cup cocoa powder

Β½ cup maple syrup or sugar

1 tsp vanilla extract

Pinch of salt

Dairy-free chocolate chips or shavings

Cocoa powder (optional)

Make the crust
Crush cookies finely, mix with melted coconut oil.
Press firmly into a lined dish. Chill 15 minutes. -
Cream layer
Beat vegan cream cheese, sugar, and vanilla until smooth.
Gently fold in whipped coconut cream.
Spread evenly over crust. Chill. -
Chocolate pudding
Whisk all pudding ingredients in a saucepan.
Cook on medium, stirring constantly, until thick.
Cool slightly, then spread over cream layer. -
Chill & finish
Chill at least 3β4 hours (overnight = best).
Top with chocolate chips or shavings before serving.
