Vegan Chocolate Lasagna

๐Ÿงพ Ingredients (8โ€“10 servings)

๐Ÿช Crust

  • 2 cups vegan chocolate sandwich cookies (like Oreos, filling included)

  • 5 tbsp melted coconut oil or vegan butter

๐Ÿฅฅ Cream Layer

  • 1ยฝ cups vegan cream cheese

  • ยฝ cup powdered sugar (or powdered coconut sugar)

  • 1 tsp vanilla extract

  • 1 cup whipped coconut cream (chilled & whipped)

๐Ÿซ Chocolate Pudding Layer

  • 2 cups plant milk (almond/soy/oat)

  • ยผ cup cornstarch

  • โ…“ cup cocoa powder

  • ยฝ cup maple syrup or sugar

  • 1 tsp vanilla extract

  • Pinch of salt

๐Ÿซ Topping

  • Dairy-free chocolate chips or shavings

  • Cocoa powder (optional)

  1. Make the crust
    Crush cookies finely, mix with melted coconut oil.
    Press firmly into a lined dish. Chill 15 minutes.

  2. Cream layer
    Beat vegan cream cheese, sugar, and vanilla until smooth.
    Gently fold in whipped coconut cream.
    Spread evenly over crust. Chill.

  3. Chocolate pudding
    Whisk all pudding ingredients in a saucepan.
    Cook on medium, stirring constantly, until thick.
    Cool slightly, then spread over cream layer.

  4. Chill & finish
    Chill at least 3โ€“4 hours (overnight = best).
    Top with chocolate chips or shavings before serving.
