2 medium zucchini, sliced into ½-inch rounds

½ cup marinara sauce (vegan, no added sugar)

½–¾ cup vegan mozzarella, shredded

1 tbsp olive oil

½ tsp garlic powder

½ tsp Italian seasoning

Salt & black pepper to taste

🔥 Oven Method

Preheat oven to 220°C / 425°F.

Pat zucchini slices dry (important for crispiness).

Toss lightly with olive oil, salt, pepper, garlic powder.

Arrange on a lined baking tray in a single layer.

Bake 10–12 minutes until just tender.

Remove, top each slice with marinara and vegan cheese.

Add toppings if using.

Return to oven and bake 8–10 minutes until cheese melts.

🍳 Air-Fryer Method

Air-fry zucchini rounds at 190°C / 375°F for 6–7 minutes, flip, top, then cook 4–5 minutes more.
