Keto Candied Pecans
Yield
About 2 cups
Serving size: 1/4 cup
Net carbs: ~2–3g per serving (depends on sweetener)
Ingredients
-
2 cups raw pecan halves
-
1/3 cup keto-friendly sweetener (granulated allulose, erythritol, or monk fruit blend)
-
Best option: allulose (doesn’t crystallize, better caramelization)
-
-
2 tablespoons butter (unsalted)
-
1 tablespoon water
-
1/2 teaspoon cinnamon
-
1/4 teaspoon fine sea salt
-
1/2 teaspoon vanilla extract
-
Optional flavor add-ins:
-
Pinch of cayenne (sweet-heat version)
-
1/4 teaspoon nutmeg
-
1/4 teaspoon pumpkin spice
-
Instructions (Stovetop Method – Best Texture)
1. Prepare the pan
Use a nonstick skillet or well-seasoned cast iron.
Set heat to medium-low (important to avoid burning).
2. Melt the base
Add butter and water to the pan.
Once butter is fully melted, stir in the sweetener, cinnamon, and salt.
Stir continuously until:
-
Sweetener is dissolved
-
Mixture looks glossy and slightly bubbly
(About 2–3 minutes)
3. Add pecans
Add pecans and stir to coat evenly.
Continue cooking for 5–8 minutes, stirring frequently:
-
Sauce will thicken
-
Pecans will look shiny and sticky
-
Avoid high heat — keto sweeteners burn fast
4. Finish
Remove pan from heat.
Immediately stir in vanilla extract (it will smell strong at first, that’s normal).
5. Cool and crisp
Spread pecans in a single layer on parchment paper or a silicone mat.
Let cool 15–20 minutes:
-
They will harden as they cool
-
Do not touch while hot — coating is soft at first
Optional Oven Method (Extra Crunch)
After stovetop coating:
-
Preheat oven to 300°F / 150°C
-
Spread pecans on parchment-lined baking sheet
-
Bake 15–20 minutes, stirring once halfway
-
Cool completely before storing
This step helps if using erythritol, which can stay slightly grainy.
Storage
-
Room temperature: airtight container, up to 1 week
-
Refrigerator: up to 3 weeks
-
Freezer: up to 3 months (great for snacking straight from frozen)
Troubleshooting Tips
-
Too grainy?
Use allulose or add 1 extra tablespoon water. -
Burning fast?
Heat is too high. Lower immediately and add 1–2 teaspoons water. -
Sticky instead of crunchy?
They need more cooling time or a short oven bake.
