🌱🍝 Vegan Baked Ziti

Cheesy • Cozy • Oven-Baked Goodness

🥣 Ingredients (Serves 4–6)

  • 400 g ziti pasta (or penne)

  • 2 cups marinara sauce

  • 1 cup vegan ricotta (store-bought or homemade)

  • 1 cup vegan mozzarella, shredded

  • ¼ cup nutritional yeast

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Salt & black pepper, to taste

Optional add-ins

  • Sautéed mushrooms or spinach

  • Vegan sausage crumbles

  • Red chili flakes


👩‍🍳 Instructions

  1. Cook pasta

    • Boil ziti in salted water until just al dente

    • Drain and set aside

  2. Flavor the sauce

    • Heat olive oil, sauté garlic until fragrant

    • Stir in marinara, Italian seasoning, salt & pepper

  3. Mix

    • In a large bowl, combine pasta, sauce, vegan ricotta, nutritional yeast

    • Fold gently until coated

  4. Assemble

    • Transfer to a greased baking dish

    • Sprinkle vegan mozzarella on top

  5. Bake

    • Bake at 190°C / 375°F for 25–30 minutes, until bubbly

    • Broil 2–3 minutes for golden top


✨ Serving Ideas

  • Fresh basil on top

  • Side salad with lemon dressing

  • Garlic bread (vegan, of course)


🧠 Tips

  • Slightly undercook pasta—it finishes in the oven

  • Cover with foil if cheese browns too fast

  • Even better the next day 🌿
