🥒❤️ Vegan Fresh Cucumber & Beet Salad

Bright • Crunchy • No-Cook

🥣 Ingredients (Serves 2–3)

  • 2 medium cucumbers, thinly sliced

  • 2 medium beets, cooked & sliced (roasted or boiled)

  • 2 tbsp red onion, very thinly sliced (optional)

  • 2 tbsp fresh dill or parsley, chopped

Dressing

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 tsp maple syrup (optional)

  • Salt & black pepper, to taste


👩‍🍳 Instructions

  1. Add cucumbers, beets, and onion to a large bowl.

  2. Whisk dressing ingredients in a small bowl.

  3. Pour dressing over salad and toss gently.

  4. Sprinkle with fresh herbs.

  5. Chill 10–15 minutes before serving for best flavor.

  • Toasted walnuts or pumpkin seeds

  • Avocado slices

  • Chickpeas for protein

  • Splash of balsamic glaze
