☕🍮 Keto Coffee-Cream “Baileys” Pudding Shots (Alcohol-Free)
🧺 Ingredients

1 cup heavy cream

¼ cup strong brewed coffee or espresso (cooled)

2 tbsp cream cheese, softened

2–3 tbsp powdered erythritol or monk fruit (to taste)

1 tsp vanilla extract

½ tsp cocoa powder (optional, for “Kahlua” depth)

Pinch salt

½ tsp gelatin powder + 1 tbsp warm water (for set)
👩🍳 Instructions

Bloom gelatin
Mix gelatin with warm water; set aside 2 minutes. -
Blend base
Blend heavy cream, cream cheese, sweetener, vanilla, coffee, cocoa, and salt until smooth. -
Set it
Melt bloomed gelatin gently (microwave 10–15 sec).
Blend into the mixture. -
Chill
Pour into small cups or shot glasses. Refrigerate 1–2 hours until set. -
Serve
Top with whipped cream or cocoa dust.
