Keto Bacon Cheeseburger Taquitos

Ingredients

Taquito Shells (Cheese Wraps)

  • 2 cups shredded mozzarella cheese

  • 1/2 cup shredded cheddar cheese
    (Use low-moisture, full-fat cheese for best crisping)

Cheeseburger Filling

  • 1 lb ground beef (80/20 preferred)

  • 6 slices bacon, chopped

  • 1/2 small onion, very finely diced (optional but adds classic flavor)

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp yellow mustard

  • 1 tbsp sugar-free ketchup

  • 1/2 tsp salt

  • 1/2 tsp black pepper

Optional Toppings (Keto-Friendly)

  • Dill pickle slices or chopped pickles

  • Shredded lettuce (for serving, not inside)

  • Sugar-free burger sauce or keto ranch


Instructions

1. Cook the Bacon

  • Heat a large skillet over medium heat.

  • Add chopped bacon and cook until crispy.

  • Remove bacon with a slotted spoon and set aside.

  • Leave about 1–2 tablespoons of bacon grease in the pan.


2. Cook the Beef Filling

  • Add ground beef to the same skillet.

  • Cook over medium heat, breaking it up, until fully browned.

  • If using onion, add it once the beef is halfway cooked.

  • Drain excess grease if needed.


3. Season the Filling

  • Add garlic powder, onion powder, salt, and pepper.

  • Stir in mustard and sugar-free ketchup.

  • Add cooked bacon back into the pan.

  • Cook for another 2–3 minutes.

  • Remove from heat and let cool slightly (important for rolling).


4. Make the Cheese Taquito Shells

  • Preheat oven to 400°F (205°C).

  • Line a baking sheet with parchment paper.

  • Mix mozzarella and cheddar together.

  • Spoon about 1/4 cup cheese per taquito into small circles (5–6 inches wide).

  • Bake for 6–8 minutes until bubbly and lightly golden around edges.


5. Roll the Taquitos

  • Let cheese cool for 30–45 seconds (still pliable).

  • Place 2–3 tablespoons of filling across the center.

  • Add pickles if using.

  • Carefully roll into a tight log.

  • Place seam-side down on the parchment.


6. Crisp the Taquitos

Option A: Oven

  • Return rolled taquitos to oven for 5–7 minutes until fully crisp.

Option B: Skillet (Extra Crispy)

  • Heat a nonstick skillet over medium heat.

  • Place taquitos seam-side down.

  • Cook 1–2 minutes per side until golden and crunchy.


Serving Suggestions

  • Serve hot with keto burger sauce, ranch, or spicy mayo.

  • Add shredded lettuce on the side for a full cheeseburger vibe.
