Instructions
1. Cook the Bacon
-
Heat a large skillet over medium heat.
-
Add chopped bacon and cook until crispy.
-
Remove bacon with a slotted spoon and set aside.
-
Leave about 1–2 tablespoons of bacon grease in the pan.
2. Cook the Beef Filling
-
Add ground beef to the same skillet.
-
Cook over medium heat, breaking it up, until fully browned.
-
If using onion, add it once the beef is halfway cooked.
-
Drain excess grease if needed.
3. Season the Filling
-
Add garlic powder, onion powder, salt, and pepper.
-
Stir in mustard and sugar-free ketchup.
-
Add cooked bacon back into the pan.
-
Cook for another 2–3 minutes.
-
Remove from heat and let cool slightly (important for rolling).
4. Make the Cheese Taquito Shells
-
Preheat oven to 400°F (205°C).
-
Line a baking sheet with parchment paper.
-
Mix mozzarella and cheddar together.
-
Spoon about 1/4 cup cheese per taquito into small circles (5–6 inches wide).
-
Bake for 6–8 minutes until bubbly and lightly golden around edges.
5. Roll the Taquitos
-
Let cheese cool for 30–45 seconds (still pliable).
-
Place 2–3 tablespoons of filling across the center.
-
Add pickles if using.
-
Carefully roll into a tight log.
-
Place seam-side down on the parchment.
6. Crisp the Taquitos
Option A: Oven
-
Return rolled taquitos to oven for 5–7 minutes until fully crisp.
Option B: Skillet (Extra Crispy)
-
Heat a nonstick skillet over medium heat.
-
Place taquitos seam-side down.
-
Cook 1–2 minutes per side until golden and crunchy.
Serving Suggestions
-
Serve hot with keto burger sauce, ranch, or spicy mayo.
-
Add shredded lettuce on the side for a full cheeseburger vibe.
-
Great as dinner, party food, or meal prep.
Tips for Success
-
Do not overfill or the taquitos will split.
-
If cheese hardens too fast, return it to the oven for 10–15 seconds.
-
For extra crunch, use all cheddar instead of mozzarella.
