🌱 Vegan Lentil Balls (Crispy Outside, Soft Inside)
Ingredients

1 cup cooked lentils (brown or green), well-drained

½ cup breadcrumbs or oats (GF if needed)

1 small onion, finely chopped

2 garlic cloves, minced

2 tbsp fresh parsley or coriander, chopped

1 tbsp flaxseed + 2½ tbsp water (flax egg)

1 tsp cumin powder
-
½ tsp paprika or chili powder

Salt & black pepper to taste

1–2 tbsp olive oil
Instructions

Mix flaxseed with water, rest 5 minutes.

Mash lentils (leave some texture).

Combine lentils, flax egg, onion, garlic, herbs, spices, and breadcrumbs.

Shape into small balls.

Cook:

Pan-fry: Shallow-fry in oil, turning until golden.

Bake: 190°C for 20–25 min, flipping halfway.

Air-fry: 180°C for 12–15 min.
