🌱 Vegan Lentil Balls (Crispy Outside, Soft Inside)

Ingredients

  • 1 cup cooked lentils (brown or green), well-drained

  • ½ cup breadcrumbs or oats (GF if needed)

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 2 tbsp fresh parsley or coriander, chopped

  • 1 tbsp flaxseed + 2½ tbsp water (flax egg)

  • 1 tsp cumin powder

  • ½ tsp paprika or chili powder

  • Salt & black pepper to taste

  • 1–2 tbsp olive oil

Instructions

  1. Mix flaxseed with water, rest 5 minutes.

  2. Mash lentils (leave some texture).

  3. Combine lentils, flax egg, onion, garlic, herbs, spices, and breadcrumbs.

  4. Shape into small balls.

  5. Cook:

    • Pan-fry: Shallow-fry in oil, turning until golden.

    • Bake: 190°C for 20–25 min, flipping halfway.

    • Air-fry: 180°C for 12–15 min.

Serving ideas

  • Toss in tomato sauce with spaghetti

  • Serve in pita or wraps with tahini sauce

  • Dip in vegan garlic mayo or hummus

Pro tips

  • Too soft? Add more breadcrumbs.

  • Want extra protein? Add 2 tbsp chickpea flour.

  • For desi flavor: add garam masala + green chili 🌶️
