🥒 Vegan Zucchini Tater Tots (Crispy & Kid-Friendly)

Ingredients

  • 2 medium zucchini, grated

  • 1 tsp salt (for draining)

  • ½ cup breadcrumbs or oats (GF if needed)

  • ¼ cup chickpea flour (or all-purpose flour)

  • 2 tbsp nutritional yeast (optional, for cheesy flavor)

  • 1 small onion, very finely chopped

  • 2 cloves garlic, minced

  • ½ tsp black pepper

  • ½ tsp paprika or chili flakes

  • 1–2 tbsp olive oil

Instructions

  1. Grate zucchini, sprinkle with salt, rest 10 minutes. Squeeze out all excess water (very important).

  2. In a bowl, mix drained zucchini with remaining ingredients to form a thick mixture.

  3. Shape into small tater-tot logs.

  4. Cook your way:

    • Bake: 200°C for 25–30 min, flip halfway.

    • Air-fry: 190°C for 12–15 min, shake once.

    • Pan-fry: Shallow-fry until golden on all sides.
