🥒 Vegan Zucchini Tater Tots (Crispy & Kid-Friendly)
Ingredients

2 medium zucchini, grated

1 tsp salt (for draining)

½ cup breadcrumbs or oats (GF if needed)

¼ cup chickpea flour (or all-purpose flour)

2 tbsp nutritional yeast (optional, for cheesy flavor)

1 small onion, very finely chopped

2 cloves garlic, minced
-
½ tsp black pepper
-
½ tsp paprika or chili flakes

1–2 tbsp olive oil
Instructions

Grate zucchini, sprinkle with salt, rest 10 minutes. Squeeze out all excess water (very important).

In a bowl, mix drained zucchini with remaining ingredients to form a thick mixture.

Shape into small tater-tot logs.

Cook your way:

Bake: 200°C for 25–30 min, flip halfway.

Air-fry: 190°C for 12–15 min, shake once.

Pan-fry: Shallow-fry until golden on all sides.
